Remember those yellow bananas you bought last week? Well they’re brown and squishy now. But no need to throw them into the compost bin just yet! Convert those old bananas into tasty banana muffins using this easy recipe. Happy baking!
Banana muffins recipe:
Ingredients:
- ⅓ coconut oil/canola oil or any high quality vegetable oil.
- 1 ¾ all purpose flour.
- 2T chia seeds (optional but they add nice texture and are super healthty)
- 1/4 cup chocolate chips (optional but required because…chocolate!)
- 1 teaspoon cinnamon.
- 1 teaspoon of vanilla extract.
- 2 eggs
- 1 cup of over ripened banana.
- ½ agave syrup.
- baking soda.
- ½ salt.

- First preheat the oven to 350° and place muffin cups in the tin*.
- In a large bowl, beat your oil and syrup together with a whisk.
- Then, add eggs and mashed bananas in the same bowl and make sure to whisk well.
- Add the baking soda, vanilla, salt, and cinnamon and whisk to combine.
- Next stir the all purpose flour, chia seeds, and chocolate chips into the mixture with a spoon.
- Pour the batter into muffin tin.
- Finally, bake for 30 min or when a inserted toothpick comes out clean, and make sure to let it cool and enjoy!
(*I bought a silicone muffin tin which makes the process way easier.)
